Mini Reubens

6 ounce box rye melba toast rounds
1/4 pound thinly sliced cooked corned beef
8 ounce can sauerkraut, rinsed, drained, and snipped
1 cup finely shredded Swiss cheese
2 teaspoons prepared mustard
Caraway seed

Preparation Instructions:

Arrange 8 toast rounds around edge of a dinner plate lined with paper toweling. Place 2 in center. Cut corned beef into 1 1/2 inch squares; place on toast rounds. Top each with about 1 teaspoon sauerkraut .Toss the cheese and mustard together until cheese is evenly coated with mustard. Spoon about 1 teaspoon cheese mixture atop sauerkraut on each round; sprinkle caraway seed lightly atop cheese. Micro cook, uncovered, on 50% (Medium) 1 to 2 minutes or until cheese is melted, rotating once. Repeat with remaining toast rounds. Makes about 48 appetizers.
