1/3 cup organic butter
2/3 cup organic cane sugar
1/4 cup blackstrap molasses
1 egg, beaten
1 1/2 teaspoons vanilla powder
1/2 teaspoon organic fine sea salt
3/4 teaspoon baking powder - no alum
1 cup organic spelt flour
1/2 cup organic brown flax meal
1/2 cup organic large oat flakes
3/4 cup organic walnuts, chopped
1/2 cup organic chocolate chips
Water (if batter is too dry)
Preparation Instructions:
Preheat oven to 375 degrees. Blend together butter, sugar, and molasses well. Add beaten egg. Mix well. Stir in vanilla powder, salt, baking powder, spelt flour, flax meal and oats. Stir in walnut pieces and chocolate chips. If the batter is too dry you may need to add a little water. Drop batter by tablespoonfuls onto lightly greased cookie sheet. Lightly flatten cookies just a little and bake in oven for 10 to 12 minutes. Makes 24 cookies.
Note: If you are going to double this recipe, use unsweetened shredded coconut for second 1/2 cup of flax meal.
