2 flour tortillas (10 to 12 inches)
8 ounce can refried beans
1 cup cooked, chopped spinach
1 hard cooked egg, chopped
1/4 cup each shredded Jack and cheddar cheese
4 slices boiled ham or roast turkey breast meat
Preparation Instructions:
1. Separate tortillas. If they seem dry and brittle, soften by holding over a stove burner, turned to high, turning often. Takes 3 or 4 seconds per side.
2. Spread half of the beans evenly on each tortilla to within 1 inch of edge.
3. Squeeze spinach to wring out water. Spread half evenly over each tortilla. Top with the egg, cheeses, and meat slices.
4. Roll each tortilla up, jelly roll fashion. Wrap in plastic wrap. Refrigerate at least 1/2 hour or up to 8 hours.
5. Cut rolls into equal pieces, each about 1 inch thick. Arrange, cut sides up, on a platter.
