Cottage Cheese and Salsa Spread

1/2 cup creamy cottage cheese
4 ounce package fresh goat cheese
2 tablespoons vegetable oil
1 clove garlic, minced
1 medium onion, chopped
1 small green pepper, seeded and chopped
2 cups peeled chopped fresh or canned whole tomatoes
1 or 2 minced jalapeno peppers
Chopped fresh tomatoes, optional
Chopped green peppers, optional

Preparation Instructions:

1. Crumble goat cheese coarsely and stir into cottage cheese. Spread should be slightly lumpy. Cover. Refrigerate until ready to serve.

2. Heat oil in saucepan. Add garlic, onion, and green pepper. Saute until onion is transparent, being careful not to brown.

3. Stir in tomatoes. Simmer uncovered, for 5 minutes. Add jalapeno. Cool to room temperature. Refrigerate, covered, if to be kept overnight.

4. Pile cheese mixture onto plate.

5. Drizzle salsa around it to form a red pool around creamy cheese. Surround with additional fresh chopped tomatoes and green pepper, if desired.

6. Serve as help yourself spread with crackers or bread.
