Ham & Egg Pie

Pastry for two 9 inch pie shells
1/2 pound thinly sliced olde fashioned ham
8 eggs
3 tablespoons finely chopped green onions
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon oregano
1 tablespoon milk

Preparation Instructions:

Line a 9 inch pie plate with pastry. Arrange half of the ham slices on top. Break 7 eggs over top. Pierce yolks but do not stir yolks and whites together. Sprinkle green onions, salt, pepper, and oregano over eggs. Top with remaining ham slices. Cover with the other pastry shell, sealing edges tightly together. Mix remaining egg with milk. Brush over pie crust. Bake at 400 degrees for 25 to 30 minutes. Makes 8 servings.
