Italian Pumpkin and Sausage Pasta

4 tablespoons extra virgin olive oil, divided
1 small onion, diced
4 to 5 cups pumpkin, peeled, seeded, and diced or 14 ounce can pureed pumpkin
Salt and freshly ground pepper
1 cup sliced italian sausage or crumbled veggie patties
14 ounces linguine or fettuccine pasta
1/4 cup freshly grated Parmesan cheese or soy equivalent

Preparation Instructions:

In a skillet, warm two tablespoons of olive oil over medium heat. Add onion and saute until soft. Add pumpkin, season with salt and pepper and cook until tender, about 15 minutes. Transfer to a blender and puree until smooth and creamy. Boil a large pot of water and cook the pasta according to the instruction on the package. In the skillet, warm the remaining two tablespoons of olive oil and saute the sausage or crumbled patties until cooked or warmed through.

Add pasta and stir well. Finally, stir in the pumpkin puree, and serve topped with a little Parmesan cheese. Serves 4.
