Mushrooms and Shrimp on Toast

1/2 pound fresh mushrooms
1/2 pound fresh cooked shrimp, medium
4 slices firm white bread
1/4 cup butter or margarine
1 tablespoon fresh lemon juice
Dash salt
Dash black pepper
Fresh thyme leaves, for garnish, optional
Fresh dill, for garnish, optional

Preparation Instructions:

1. Clean mushrooms with a paper towel or with a small brush.

2. Rinse shrimp. Pat dry. Marinate, if desired (see tips).

3. Cut the bread slices into 1 inch squares.

4. In a skillet, melt half the butter. Saute the mushrooms over medium to high heat until all liquid is evaporated. Sprinkle with salt and pepper. Remove from pan. Set aside.

5. Saute the shrimp in the pan for 1 minute. Add lemon juice. Keep warm.

6. Clean skillet.

7. Melt the remaining butter in skillet. Fry the bread squares until just crisp and golden.

8. Combine mushrooms and shrimp on the bread.

9. Garnish with thyme or dill, if desired. Serve. Makes 20 appetizers.

Tips: You may use canned mushrooms in place of the fresh. Drain and saute in butter as indicated. You may marinate the shrimp in 2 tablespoons lemon juice and 3 tablespoons oil for 30 minutes before assembling.
