Bigelow Mint Medley Tabbouleh

6 Bigelow Mint Medley Herb Tea tea bags
1 1/4 cups boiling water
3/4 cup bulgur wheat
1 large tomato, diced
1/2 English cucumber, peeled and diced
3/4 cup crumbled Feta cheese
1/4 cup thinly sliced green onions
1/4 cup chopped pitted Greek olives
1 tablespoon chopped fresh mint leaves
1 1/2 tablespoons extra virgin olive oil
Salt and pepper, to taste
Lettuce

Preparation Instructions:

In a glass measuring cup, pour 1 cup boiling water over tea bags; steep for 5 minutes. Remove tea bags, squeezing as much liquid as possible back into the cup. If needed, add additional boiling water to measure 1 cup.

Place bulgur wheat into a bowl; add mint tea and let stand until all liquid is absorbed, stirring occasionally.

Add tomato, cucumber, Feta, green onions, olives and mint, turning to mix well. Stir in olive oil and season to taste. Serve over a bed of lettuce. Serves 4.
