Apple Frittata with Rosemary

2 eggs, beaten
2 teaspoons water
1 apple, peeled, finely diced
1/4 teaspoon chopped fresh rosemary
Salt and pepper, to taste

Preparation Instructions:

1. Combine all ingredients in a mixing bowl.

2. Spray a small non stick skillet with cooking spray. Preheat to medium.

3. Pour egg mixture into skillet. Ass egg mixture sets at the edges, with a spatula, gently lift cooked portion to allow uncooked egg to flow underneath. Cook until bottom is set and top is almost set.

4. Slide frittata onto a plate, then invert back into skillet. Cook another 1 to 2 minutes to cook second side.

5. Serve on a warm plate.

** If you prefer, use an ovenproof skillet and place under a preheated broiler for a few seconds to set frittata top.
