Lemon Chicken

4 boneless skinless chicken breasts
Marinade:
250 ml lemonade
4 cloves garlic, crushed
Zest and juice of 1 lemon
1 tablespoon extra virgin olive oil
Fresh ground pepper

Preparation Instructions:

1. In a large resealable plastic bag combine all the marinade ingredients.

2. Add chicken, seal bag, shake, and refrigerate for 4 to 8 hours.

3. Heat barbecue.

4. Remove chicken from bag and reserve liquid.

5. Grill chicken slowly until cooked.

6. Meanwhile, pour marinade liquid into a saucepan.

7. Bring to boil and then reduce heat to simmer. Simmer for 15 minutes.

8. Pour reduced sauce over cooked chicken and serve.
