4 tablespoons unsweetened orange juice
4 tablespoons honey
2 tablespoons rum
4 firm, ripe bananas
2 cinnamon sticks, broken in half
Preparation Instructions:
Preheat the oven to 350 degrees. Put the orange juice, honey and rum in a small bowl and mix well. Peel the bananas and slice each one in half lengthwise. Put the banana halves in a shallow ovenproof dish. Add the broken cinnamon sticks. Pour over the orange juice mixture and turn the bananas over in the mixture. Cover the dish with foil and bake for about 30 minutes, until the bananas are softened. Remove and discard the cinnamon sticks. Serve the bananas on warmed serving plates with the sauce spooned over. Add a dollop of creme fraiche, light sour cream, or yogurt, or a scoop of homemade yogurt ice.
