3 ounce package cream cheese
2 1/2 cups sifted confectioners' sugar
1/2 teaspoon almond extract
1/2 cup chopped almonds, walnuts, or Brazil nuts, or flaked coconut
Pinch salt
Preparation Instructions:
With electric mixer at medium speed (or with spoon), beat cream cheese until soft and smooth. Slowly blend in sugar, extract, nuts, salt. Press into greased 9 x 5 x 3 loaf pan. Refrigerate until firm; cut into squares. Makes about 2 1/2 dozen
Chocolate Nut: Reduce sugar to 2 cups. Add 2 squares unsweetened chocolate, melted. Substitute vanilla extract for almond extract, walnuts for almonds.
Peanut Butter: Substitute 2 tablespoons peanut butter for almond extract, 1/4 cup chopped salted peanuts for almonds.
