Broiled Haddock Steaks

2 tablespoons olive oil
Finely grated rind and juice of 2 limes
2 tablespoons chopped fresh flatleaf parsley
1 tablespoon chopped fresh oregano
Sea salt
Freshly ground black pepper
4 haddock steaks
Fresh herb sprigs, to garnish

Preparation Instructions:

Put the oil, lime rind and juice, parsley, oregano, and seasoning in a small bowl and whisk until thoroughly mixed. Pour into a shallow, nonmetallic dish. Add the fish and turn to coat it all over in the marinade.Cover and leave in a cool place to marinate for about 1 hour. Preheat the broiler to medium. Line a broiler rack with foil. Place the fish steaks on the broiler rack in a broiler pan. Broil for about 5 minutes on each side, until the fish is cooked and the flesh flakes when tested with a fork. Brush with the marinade frequently during cooking to prevent the fish from drying out. Garnish with fresh herb sprigs and serve hot with cooked fresh vegetables. Makes 4 servings.
