Herbed Mushrooms

3 or 4 large portabello mushrooms
1/2 - 1 cup fresh herbs, such as basil and thyme or parsley and tarragon or chives
1/4 cup olive oil
1/2 lemon
Salt and pepper to taste

Preparation Instructions:

Trim the stems of the portabella mushrooms off about 1/4 inch from base. Cut mushrooms into thick slices. Place mushroom slices on a square of heavy duty aluminum foil.

Pick herb leaves off the stems, then roughly chop them into large pieces. Place the herbs on top of the mushrooms. Pour oil over them, then squeeze the lemon over. Sprinkle with some salt and pepper. Fold foil up around them and seal. Place in 400 degree oven for about 15 to 20 minutes, or place foil packet on a grill for 10 to 15 minutes. Serve hot as a side dish. Makes 2 to 4 servings.
