Sausage, Pepper, and Potato Skillet

1 pound Italian style sausage, sliced 1 inch thick
1 medium size yellow onion, cut into 1 inch cubes
1 large sweet green pepper, cored, seeded and cut into 1 inch squares
1 large sweet red pepper, cored, seeded and cut into 1 inch squares
1 1/4 pounds small new potatoes, cut into 3/4 inch cubes
3/4 cup water
1/8 teaspoon black pepper

Preparation Instructions:

Brown the sausage on all sides in a deep 12 inch skillet over moderate heat - about 10 minutes. Drain off all but 2 tablespoons of the drippings. Stir in the onion, green and red peppers, potatoes, water, and black pepper. Reduce the heat to low, cover, and cook for 15 to 20 minutes or until the potatoes are tender. Serves 4.
