3/4 cup granulated sugar
1/2 cup warm water
1 tablespoon active dry yeast
1/2 cup butter or margarine, cubed
1/2 cup milk
3 eggs
1 teaspoon vanilla
5 cups all purpose flour (approx)
1/2 teaspoon each baking powder and salt
Icing sugar
Filling:
1/2 cup packed brown sugar
1/4 cup finely chopped walnuts or pecans
2 tablespoons melted butter
Preparation Instructions:
In shallow bowl, dissolve 1 tablespoon of the granulated sugar in warm water. Sprinkle in yeast; let stand for about 10 minutes or until frothy.
Meanwhile, in small saucepan, warm butter and milk over medium low heat, stirring, until butter is melted. Whisk in eggs and vanilla. Whisk into yeast mixture.
In large bowl, stir together 4 cups of the flour, remaining granulated sugar, baking powder and salt. Make well in center of dry ingredients; pour in milk mixture and stir with wooden spoon until combined. With hands, knead in enough of the remaining flour to make soft dough.
Turn out onto lightly floured surface; knead for 5 minutes or until dough is smooth and elastic. Place in greased bowl, turning to grease all over. Cover with plastic wrap; let rise in warm draft free place until doubled in bulk, about 3 hours.
Punch dough down. Divide into 5 pieces; roll each into ball. One at a time and keeping remaining dough covered with tea towel, press or roll ball into 8 inch disc. With sharp knife, cut pie fashion into 8 triangular pieces.
Filling: Stir together brown sugar, walnuts and butter until moist and crumbly.
One at a time, place triangles on work surface with rounded edge toward you. Place heaping 1/2 teaspoon filling in center of each about 1/2 inch from nearest edge. Fold left and right corners over filling and roll up toward point. Place on greased baking sheet, point down. Repeat with remaining balls of dough and filling.
Cover rolls with tea towels and plastic wrap. Let rise in warm draft free place until almost doubled in bulk, about 2 hours. Brush or spray with water.
Bake in 325 degree oven for 17 to 20 minutes or until golden brown. Let cool on pans for about 15 minutes or until just warm. Sprinkle lightly with icing sugar. Makes 40 rolls.
