3 cups macaroni
1/4 cup butter
1/4 cup flour
3 cups warm 1% milk
Pinch salt
3 cups shredded light or regular old cheddar cheese
Cherry tomatoes, quartered, optional
Crushed red pepper flakes, optional
Preparation Instructions:
Cook macaroni according to package directions. Melt butter. Add flour; cook and stir 3 to 4 minutes. Gradually whisk in milk; cook, stirring constantly, until just thickened. Season to taste with salt. Remove from heat; stir in cheese until melted. Add macaroni and toss to coat. Serve topped with tomato and red pepper flakes, if desired. Serves 4.
