Peach Crepes

2 cups water
1/4 cup confectioners' sugar
4 peaches, skinned and sliced
Orange butter
2 tablespoons Grand Marnier
Crepes

Preparation Instructions:

In a small saucepan, bring water and confectioners sugar to a boil. Stir until mixture is clear. Add peaches. Cook until soft, about 10 minutes. Meanwhile, prepare orange butter as in Crepe Suzette and spread on crepes. In large skillet, fry each crepe, butter side down, 1 to 2 minutes. Fill crepes with peaches, fold each one into a triangle and return to skillet, spreading them evenly. Flame with Grand Marnier.
