Pineapple Chutney

2 cans (20 oz each) crushed pineapple, drained and 1/2 cup juice reserved
1 1/2 cups raisins
3/4 cup cider vinegar
2/3 cup packed brown sugar
1/3 cup chopped green pepper
1/4 cup chopped onion
2 cloves garlic, minced
2 tablespoons finely chopped crystallized ginger
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon cayenne

Preparation Instructions:

Place pineapple and reserved liquid in 3 quart casserole. Combine with remaining ingredients. Cover and microwave at High for 10 minutes, stirring after 5 minutes. Uncover. Microwave at High for 15 to 20 minutes, or until desired consistency, stirring every 5 minutes. Chill. Serve as a relish with meat. Makes about 6 cups chutney.
