1 chopped unpeeled English cucumber
4 cups buttermilk
1/2 cup sour cream
1 teaspoon freshly squeezed lemon juice
1/2 teaspoon salt
A few baby salad shrimp
Cucumber slices
Chopped fresh dill or coriander
Preparation Instructions:
In a food processor, whirl chopped cucumber. Pour into a bowl. Stir in buttermilk, sour cream, lemon juice, and salt. Spoon into soup bowls. Top with a few baby salad shrimp and cucumber slices. Sprinkle with dill or coriander. Serves 6.
