Garlic Mashed Potatoes

1 1/2 pounds peeled red potatoes, cut into 1/2 inch cubes, rinsed and drained
1/2 cup water
2 - 4 large cloves garlic, peeled and quartered
1/3 cup hot milk
1 tablespoon butter or margarine
1 tablespoon dried chives
1/2 teaspoon salt
Paprika (optional)

Preparation Instructions:

In 2 quart saucepan, combine potatoes, water and garlic. Bring to a boil over high heat. Cover. Reduce heat to medium low. Simmer for 10 to 14 minutes, or until potatoes are very tender, stirring occasionally. Drain. In medium mixing bowl, combine potato mixture, milk, margarine. chives and salt. Beat at medium speed of electric mixer until smooth. Before serving, sprinkle with paprika. Makes 6 servings.
