Bananas and Carmelized Passion Fruit Sauce over Coconut Ice Cream

2 tablespoons unsalted butter
2 tablespoons brown sugar
1 cup passion fruit juice
3 bananas
1 litre coconut ice cream or enough for 4 servings

Preparation Instructions:

1. In a large frying pan melt the butter and th brown sugar.

2. Add the passion fruit juice and stir until combined.

3. Bring to a boil. Reduce heat to medium and continue boiling until the sauce has been reduced by half - approximately 5 - 7 minutes. Stir occasionally.

4. Peel and cut the bananas in half. Cut the halves lengthwise into 2 pieces. You will have 12 pieces of banana when you are finished.

5. Add the slices of banana to the cooked sauce and cook until they are just beginning to soften.

6. Remove the pan from the heat. Let cool for 5 minutes.

7. Scoop the ice cream into 4 serving dishes and top with the semi cooled banana/passion fruit sauce.
