Mike's Beer Battered Fish

Canola oil
1 1/2 cups all purpose flour
1 can beer
1 egg
2 teaspoons chopped fresh dill
1 teaspoon each salt and pepper
2 pounds fish fillets, cut in serving pieces

Preparation Instructions:

In deep fryer or Dutch oven, heat 3 inches oil to 375 degrees. In bowl, whisk together flour, beer, egg, dill, salt and pepper until smooth. Drop fish pieces into batter and turn until coated. Place fish in hot oil and fry, turning once, for 5 to 7 minutes or until deep golden brown on both sides. Drain on wire rack. 6 servings.
