Gnocchi with Sausage, Green Onions and Cream

18 ounce package gnocchi
2 chorizo or Italian sausages, crumbled (casing removed)
1 tablespoon olive oil
4 shallots or garlic cloves, finely chopped
6 - 7 green onions, chopped
2/3 cup chopped, grilled or roasted red pepper
1 1/2 cups whipping cream
Salt and freshly ground pepper
Chopped fresh parsley

Preparation Instructions:

Cook gnocchi according to package directions. Saute sausage in oil until just cooked through. Add shallots, green onions and red pepper; saute 1 - 2 minutes longer. Add cream; simmer 1 - 2 minutes. Season to taste with salt and pepper. Toss gnocchi with cream sauce. Serve topped with parsley, if desired. Makes 4 servings.
