Brown Rice and Shrimp Salad

AmountIngredient
1 poundmedium shrimp, shelled and deveined
3 cupscooked brown rice
2 cupsshredded fresh spinach leaves
1/2 cupcherry tomatoes, cut in half
1 tablespoondiagonally sliced green onion
Dressing:
2 tablespoonswhite wine vinegar
1 tablespoon plus 1 1/2 teaspoonslow-sodium soy sauce
1 tablespoonpeanut oil
1/4 teaspoonground turmeric
1/8 teaspoongarlic powder

Preparation Tips:

In 8 inch round baking dish, arrange shrimp in single layer.
Cover with plastic wrap.
Microwave at 70% (Medium High) for 5 to 8 minutes, or until shrimp are opaque, stirring once.
Let stand, covered, for 1 to 2 minutes.
Rinse with cold water.
Drain.
Set aside.
In large mixing bowl or salad bowl, combine rice, spinach, tomatoes and onion.
Mix well.
Add shrimp.
Set aside.
In small mixing bowl, combine dressing ingredients.
Mix well.
Pour over salad.
Toss to coat.
Cover with plastic wrap and chill 2 hours, or until serving time.
Serves 6.
