Cranberry Puffs

AmountIngredient
1 cupcranberry-orange relish
1 cupBisquick baking mix
1/4 cupsugar
1egg
1/3 cupmilk
Butter Sauce: 
1/2 cupsugar
1/4 cuplight cream
1/4 cupbutter or margarine
1/2 teaspoonvanilla

Preparation Instructions:

Heat oven to 400 degrees. Grease 8 large muffin cups. Spoon about 2 tablespoon cranberry-orange relish into each cup. Mix remaining ingredients except Butter Sauce with spoon; beat vigorously 1/2 minute. Fill muffin cups 2/3 full with batter.

Bake about 15 minutes or until bops are golden. Invert puffs onto wire rack. Serve warm with Butter Sauce. 8 servings.

Butter Sauce: Heat sugar and light cream to boiling, stirring constantly. Remove from heat. With rotary beater, beat in butter and vanilla.

Blueberry Puffs: Substitute mixture of 1/3 cup sugar and 3/4 cup fresh or canned blueberries, drained, for the cranberry-orange relish.

Cranberry Cake: Spread cranberry-orange relish in greased baking pan, 8x8x2 inches. Pour batter over relish. Bake 20 to 25 minutes. Cut into squares. 9 servings.
