Green Barbecue Relish

Preparation Instructions:Put vegetables through coarse blade of food chopper, or chop very finely (remove seeds from peppers first). Sprinkle with salt and let stand overnight. Drain and rinse in cold water. Combine vinegar, sugar and spice; bring to boil and simmer 10 minutes. Add vegetables and heat to boiling point. Pack into hot sterilized jars and seal.
Yield: about 3 pints.
