Strawberry Nut Bread

AmountIngredient
2 (10 ounce) packagesfrozen, sliced strawberries
4eggs
1 cupcooking oil
2 cupssugar
3 cupsall purpose Gold Medal flour
1 tablespooncinnamon
1 teaspoonbaking soda
1 teaspoonsalt
1 1/4 cupschopped nuts

Preparation Instructions:

Defrost the strawberries. Beat the eggs until fluffy. Add oil, sugar and strawberries. Sift together in a large bowl-flour, salt, cinnamon and baking soda. Add the dry ingredients to strawberry mixture and blend well. Stir in nuts. Pour in 2 greased & floured loaf pans. Bake for 45 minutes to 1 hour, then turn out and cool on racks. Remember to watch your oven because as you know ....oven temperatures vary.

You could frost with cream cheese or leave plain . It is delicious either way. It slices better when cold. Serve with strawberries on the side with tea or coffee.
