Mango Lime Bread

AmountIngredient
1/2 cupvegetable oil
3/4 cupgranulated sugar
2eggs
1/2 teaspoonvanilla
2 cupsall-purpose flour
1 teaspoonbaking soda
1/4 teaspoonsalt
3/4 cuppeeled and diced firm ripe mango
1 tablespoonlime juice
2 teaspoonsgrated lemon rind
1/2 cupchopped walnuts
Glaze: 
1 cupicing sugar, sifted
1 tablespoonfinely grated lime rind
1 - 2 tablespoonslime juice

Preparation Instructions:

1. In large bowl, beat oil with sugar until smooth. Beat in eggs, one at a time, with vanilla.

2. In medium bowl, mix together flour, baking soda, & salt, add to sugar mixture.

3. Fold in mango, lime juice, rind & walnuts. Pour batter into a greased 8 x 4 in (22 x 11 cm) loaf pan. Bake in 350 F (180 C ) oven for 45 minutes or until toothpick inserted in centre comes out clean.

4. Cool a few minutes in pan, remove and cool on a wire rack.

ICING: In small bowl, combine icing sugar and lime rind. Stir in enough lime juice until mixture is spreading consistency. Drizzle over loaf, sprinkle over loaf, sprinkle with additional sifted icing sugar, if desired.

TIP: May be frozen without icing, wrap well in plastic wrap and place in freezer bag.
