Tortilla Quiche

AmountIngredient
 Vegetable spray
56 inch flour tortillas
1 cupchopped cooked ham
1 cupyour favourite shredded cheese blend
8eggs, beaten
1/2 cupcream-style corn
1 teaspoonchili powder
1/2 cupchopped green or red pepper
2 tablespoonsfinely chopped fresh cilantro or parsley

Preparation Instructions:

Spray a 9 inch pie plate with vegetables spray. Place 4 tortillas in pie plate, overlapping and extending 1/2 inch beyond the rim. Place remaining tortilla in the center. Layer with ham and cheese. Combine eggs, corn, and chili powder; slowly pour over ham mixture. Sprinkle with peppers. Bake at 350 degrees for 25 to 30 minutes or until the center is set. Sprinkle with cilantro. Let stand for 5 to 10 minutes before serving. Makes 4 to 6 servings.

Tips: For a change of taste, try different flavoured tortillas. For a lunch bag, wrap quiche in plastic wrap; it can be warmed in the microwave oven.

Suggestion for complete meal: Serve with avocado slices and cherry tomatoes followed by vanilla pudding.
