Peach-Ginger Crisp

AmountIngredient
6 cupssliced peaches
2 tablespoonshoney
1 1/2 tablespoonsminced candied ginger
2 tablespoonscornstarch
1 cupunbleached flour
1/4 cuprolled oats
1/3 cuppacked light brown sugar
4 tablespoonslight margarine, cubed and chilled
3 tablespoonschopped pecans, toasted
 Frozen fat free vanilla yogurt

Preparation Instructions:

Preheat oven to 350 degrees.

In a large bowl, toss peaches and honey. Sprinkle with ginger and cornstarch. Set aside.

In a medium bow, combine flour, oats, and brown sugar. Using a pastry blender or fork, cut in margarine. Add pecans and toss lightly with 2 forks to combine.

Spoon peaches into a 2 quart baking dish. Sprinkle oat mixture on top. Bake until golden and hot, about 45 minutes.

allow to cool for 30 minutes before serving. Top with a dollop of yogurt. Serves 8.

Per Serving: 233 calories; 4.4 g fat; 3.1 g fibre; 0 mg cholesterol; 41 mg sodium.
