Rock Sugar (Rock Candy)

Preparation Tips:Boil water in a saucepan. Turn off the heat and add 1 1/2 cups sugar. Stir until completely dissolved. Keep adding sugar, a little at a time, until no more sugar will dissolve in the water. Pour this solution into a jar and while it is cooling, get a piece of string and tie one end of it to a pencil. Rub a little sugar onto the string (these are the "seed" crystals) and drop the string into the sugar solution, resting the pencil across the rim of the jar. It may help to weight the end of the string with a paper clip to make it sink. Leave alone; don't touch or move it. After a few days, edible crystals will grow on the string.
