Low Fat Turkey Bacon Frittata

AmountIngredient
1 packageButterball Bacon Style Turkey (heated and chopped)
6 ouncesuncooked angel hair pasta, broken
2 teaspoonsolive oil
1small onion, sliced
1red bell pepper, cut into strips
16 ouncesEgg Beaters egg substitute (or 8 large eggs)
5 ouncesfat free ricotta cheese
4 ouncesfat free mozzarella cheese, shredded
4 ouncesreduced fat Swiss cheese, shredded
1/2 teaspoonsalt
1/2 teaspoonblack pepper
10 ounce packagefrozen spinach, thawed and squeezed dry

Preparation Instructions:

Chop and heat Butterball Bacon Style Turkey. Cook and drain pasta. Heat oil in large skillet over medium heat until hot. Cook and stir onion and bell pepper until tender. combine egg substitute, cheeses, salt, pepper and cooked pasta in large bowl. Add vegetables, spinach and Butterball Bacon Style Turkey. Spray 10 inch quiche dish with nonstick cooking spray; pour mixture into dish. Bake in preheated 350 degree oven for 30 minutes. Cut into wedges and serve with spicy salsa, if desired. Makes 8 servings.

Per serving when prepared with Egg Beaters: 280 calories; 9 g fat; 780 mg sodium.
