"Mexican-Style Snapper"

2 cupschopped unpeeled tomato (about 3/4 pound)
1/4 cupchopped green onions
3 tablespoonsfresh lime juice
2 tablespoonscanned chopped green chile peppers
1 tablespoonchopped fresh parsley
1/8 teaspoonsalt
Dashgarlic powder
Dashpepper
4 (4 ounce)red snapper, cod, grouper, or sea bass fillets

Preparation Instructions:

Combine first 8 ingredients in a large skillet; stir well. Bring to a boil; reduce heat, and simmer, uncovered, 10 minutes. Add fish; cover and cook an additional 11 minutes or until fish flakes easily when tested with a fork. Place fish on a serving platter; spoon tomato mixture on top of fish, using a slotted spoon. 4 servings.

Per servings: about 137 calories; 24.2 g protein; 1.7 g fat; 5.7 g carbohydrates; 42 mg cholesterol; 162 mg sodium.
