Smoked Salmon and Radish Dip

Serving Size: Makes 2 cups

AmountIngredient
3/4 cupsour cream
1/2 cuplow-fat pressed cottage cheese
1/2 cupcream cheese, softened
Pinchsalt
Pinchpepper
4 ouncessmoked salmon, finely chopped
1/2 cupfinely chopped red radishes ( about half bunch)
1/3 cupfinely chopped red onion
2 tablespoonschopped fresh chives (optional)

Preparation Instructions:

In large bowl, beat together sour cream, cottage cheese, cream cheese, salt and pepper. Stir in salmon, radishes, onions, and chives (if using). Transfer to serving bowl. (Make ahead: Cover and refrigerate in airtight container for up to 2 days; let stand at room temperature for 30 minutes before serving.) Makes 2 cups.

Tips: Smoked salmon varies in its degree of saltiness. You can omit the salt and taste for seasoning just before serving, if desired. The dip can also be made with light sour cream and light cream cheese.

Per 1 tablespoon: about 30 calories; 2 g fat; 1 g carbohydrates; 2 g protein; trace fibre; 42 mg sodium; 7 mg cholesterol.
