Savoury Salmon Fritatta

AmountIngredient
4 teaspoonsmargarine
3 cartonsSimply Egg Whites or Break Free liquid eggs, well shaken
1/4 cupskim milk
2 teaspoonsfinely grated lemon peel
1/2 teaspoonsalt
1/2 teaspoonpepper
4High Liner Salmon Fillets in a Light Dill Sauce, thawed
1/4 cupchopped green onions
1 cupshredded light Jarlsberg cheese or other white cheese

Preparation Instructions:

1. Preheat oven to 375 degrees. Lightly grease a 13 x 9 inch baking dish with 1 teaspoon margarine.

2. Whisk eggs with remaining margarine, milk, lemon peel, salt, pepper and the sauce from the salmon. Cut the salmon into chunks and scatter evenly in to prepared dish. Sprinkle evenly with onions. Pour egg mixture over salmon and onions. Sprinkle cheese evenly over top.

3. Bake in center of preheated oven for 35 to 40 minutes or until set in the center and golden brown. Let stand for 5 minutes before slicing. Makes 8 to 10 servings.

Per servings: about 141 calories; 22.1 g protein; 4.7 g fat; 1.8 g carbohydrates; 25 mg cholesterol.
