"Oven-Barbecued Brisket of Beef"

AmountIngredient
4 to 5 poundbrisket of beef
 Liquid smoke (optional)
2 cups (1/2 recipe)Texas Barbecue Sauce
Texas Barbecue Sauce: 
2medium onions, finely chopped (1 cup)
1 clovegarlic, finely chopped
1/4 cupvegetable oil
2 tablespoonschili powder
2 cupsketchup
1 cupcider or white vinegar
1/2 cuplemon juice
1/4 cupWorcestershire sauce
1/3 cupfirmly packed brown sugar
2 tablespoonsprepared mustard
1 tablespooncelery seeds
2 teaspoonscumin seeds, crushed
2 tablespoonsbutter or margarine

Preparation Instructions:

1. Center a 24 inch length of 18 inch heavy duty foil in a 13 x 9 x 2 inch baking pan.

2. Place brisket on center of foil. Add liquid smoke to sauce if you wish; pour sauce over meat. Bring ends of foil together evenly; fold over and continue folding down to top of meat. Fold sides up to make a neat sealed package.

3. Bake package in the pan in a 350 degree oven for 3 hours or until meat is tender.

Remove from oven. Carefully open foil; lift meat to heated serving platter. Pour sauce from foil into sauce dish. Skim off excess fat. Serve sauce with meat.

Texas Barbecue Sauce: 1. Saute onions and garlic in oil in a large saucepan until golden and tender, 10 minutes; stir in chili powder and cook 1 minute.

2. Add all remaining ingredients except butter; bring to boiling. Lower heat; simmer uncovered, stirring often, for 30 minutes. Stir in butter.
