Banana Apricot Tea Loaf

Serving Size: one 9 x 5 loaf

AmountIngredient
1/3 cupbutter or margarine
3/4 cupgranulated sugar
2eggs
Grated rind of 1lemon
1 2/3 cupsall purpose flour
2 teaspoonsbaking powder
1/4 teaspoonbaking soda
1/4 teaspoonsalt
2/3 cupwheat germ
1 cupmashed banana
1 cupchopped dried apricots

Preparation Instructions:

1. Beat together the butter and sugar until creamy and light.

2. Beat in 1 egg at a time. Stir in the lemon rind.

3. In a separate bowl, combine the flour, baking powder, baking soda, salt, and wheat germ.

4. Stir into the butter mixture with the banana. Blend well. Do not overmix. Stir in apricots.

5. Pour mixture into a greased loaf pan.

6. Bake at 350 degrees for about 60 minutes until golden brown and a toothpick comes out clean.

7. Cool in pan for about 10 minutes before carefully turning out onto a rack to completely cool.

Per Serving: 226 calories; 5.3 g protein; 7.1 g fat; 38.4 g carbohydrates; 181 mg sodium.
