Mulled Wine

AmountIngredient
1 bottle (750 ml)medium-sweet white wine
1 bottle (750 ml)pmedium-sweet red wine
3 ounces/75 gramgranulated sugar
1 inch/2.5 cm stickcinnamon
1bay leaf
1 blademace
6cloves
1small orange
2 tablespoonsrum
2 ounces/50 gramssultanas

Preparation Tips:

Put the white and red wines in a large pan with the sugar, cinnamon stick, bay leaf, mace and cloves. Thinly pare the rind from the orange and add it to the pan. Bring to the boil slowly, then remove from the heat, cover and let it stand for 30 minutes. Meanwhile, squeeze out and strain the orange juice and pour it with the rum over the sultanas. Leave them to soak. Add them to the wines and bring the mixture to simmering point. Take out the cloves, mace, bay leaf and cinnamon and serve at once. Serves 10.
