Pasta Medallions with Chicken & Sundried Tomato Pesto

300 gram packageOlivieri Five Cheese Medallions
1 tablespoonolive oil
2 clovesgarlic, minced
2boneless, skinless chicken breasts, cut into strips
170 gram packageOlivieri Sundried Tomato Pesto Sauce
2 tablespoonslemon juice
1 1/2 teaspoonssalt
1/2 cupgrated Parmesan cheese
1/4 cupchopped fresh basil
1/8 teaspoonblack pepper

Preparation Instructions:

Cook pasta according to package directions. Meanwhile, in medium skillet, heat oil over medium-high heat. Saute garlic 30 seconds. Add chicken and saute 3 - 4 minutes or until no longer pink inside.

In large serving bowl, combine sundried tomato pesto, lemon juice, cheese, basil and pepper.

Drain pasta; add to bowl, and toss with sauce. Top with chicken. Serves 4.

Per serving: 662 calories; 33.6 g protein; 40.6 g fat; 40 g carbohydrates; 3.6 g fibre.
