Preparation Instructions:Toss together cabbage, carrots, onion, red pepper and parsley in a large bowl. Combine dressing ingredients in a microwaveable bowl or glass measure. Microwave at high for 1 minute. Stir to dissolve sugar. Pour over vegetables and toss well. Cover and refrigerate several hours or overnight. Makes 6 to 8 servings.
Per serving: 83 calories; 1 g protein; 4 g fat; 13 g carbohydrates; 2 g fibre; 449 mg sodium.
