Green Salad with Grilled Chicken, Swiss Cheese & Curried Yogurt Dressing

1 cupplain yogurt
1/4 cupcoffee cream
2 tablespoonssmooth mango chutney or to taste
2 tablespoonsfinely chopped green onions
1 teaspooncurry powder or to taste
8 ouncesboneless, skinless chicken breasts
8 ouncesSwiss cheese, cut into matchstick pieces
10 cupscut up mixed salad greens or romaine lettuce
2 cupscherry tomato halves
1 1/4 cupsthinly sliced English cucumber
1/2 cupjulienned carrot

Preparation Instructions:

1. Combine yogurt, cream chutney, onions and curry powder in a medium sized bowl. Stir until well combined. Remove 2 tablespoons curried yogurt dressing; set remaining dressing aside.

2. Brush chicken with the 2 tablespoons curried yogurt dressing and place on preheated grill. Cook with lid closed, over medium heat 10 minutes or until chicken is not longer pink in center, turning once halfway through. Remove from heat; cut into thin slices.

3. Combine chicken, salad greens, Swiss cheese, tomatoes, cucumber and carrot in a large salad bowl. Pour reserved curried yogurt dressing over all and toss well to coat. Add salad and pepper to taste.

Variation: Substitute Grilled ham for chicken and baby spinach leaves for mixed salad greens or romaine lettuce.

Per serving: 350 calories; 31 g protein; 18 g fat; 16 g carbohydrate.
