Dijon Chicken Fettuccine

1 tablespoonmargarine or butter
1 poundboneless, skinless chicken breasts, cut into 1 inch pieces
1medium onion, chopped
1 cupsliced fresh mushrooms
224 g packageChicken Helper, Fettuccine Alfredo
2 1/2 cupshot water
1 cupmilk
2 tablespoonsDijon mustard
1 cupfrozen peas
 Grated Parmesan cheese (optional)

Preparation Instructions:

In large skillet, melt butter over high heat. Cook chicken, onion and mushrooms 3 to 5 minutes, stirring occasionally, until outside of chicken turns white.

Stir in Sauce Mix, hot water, milk, and mustard. Heat to boi8ling, stirring occasionally. Stir in uncooked Pasta. Reduce heat; cover and simmer about 10 minutes, stirring occasionally, until pasta is tender.

Stir in peas. Cover and cook 2 minutes; stirring occasionally. Remvoe from heat. Uncover; let stand 5 minutes or until sauce is as thsci as you'd like (sauce will thicken as it stands). Stir before serving. Serve with grated Parmesan cheese, if desired. Serves 5.

Per serving: 326 calories; 27.9 g protein; 7.7 g fat; 36.6 g carbohydrate; 1.6 g dietary fibre.
