"Cucumber & Mint Dip"

Serving Size: Makes 2 to 4 servings

Preparation Instructions:Put the cucumber into a sieve, sprinkle with salt, and leave for at least 30 minutes. This draws out some of the liquid so the dip is not watery. Spoon the yogurt into a bowl. Pat the cucumber dry with paper towels, and mix with the yogurt. Add the mint, vinegar, and black pepper to taste. Stir gently, and serve at once. Serves 2 to 4.
