"Apricot Cake"

Serving Size: Makes 1 bundt or tube cake

AmountIngredient
2 1/4 cupsflour
1 1/2 teaspoonsbaking powder
2 cupswater
1/2 cupwhite sugar
1/2 cupgolden raisins
1 1/4 cupschopped apricots
1 1/2 cupswhite sugar
1 cupbutter or margarine
4eggs
8 ouncescream cheese
1 1/2 teaspoonsvanilla

Preparation Instructions:

Boil together water, 1/2 cup sugar, raisins, and apricots.

Cream together 1 1/2 cups sugar, butter, eggs, cream cheese and vanilla.

Add apricot mixture to creamed mixture and stir. Add flour and baking powder until all ingredients are completely combined.

Bake in greased tube or bundt pan at 350 degrees for 1 1/2 hours or until golden brown.
