Devilled Skillet Chicken Breasts

Serving Size: Makes 4 servings

AmountIngredient
4boneless chicken breasts, 1 1/2 pounds
3 tablespoonsolive oil
2 tablespoonsbutter or margarine
2 large clovesgarlic, mashed
1/2 cupdry white wine
Juice of 1lemon
1/4 teaspoonsalt
1/8 teaspoonblack pepper
1/4 to 1/2 teaspooncrushed red pepper
1/4 cupchopped Italian parsley

Preparation Instructions:

1. Rinse chicken. Pat dry. In a large, heavy skillet, heat the olive oil and butter. Add the garlic. Saute quickly. Remove.

2. Brown the chicken breasts on each side, 8 minutes total time.

3. Add the wine and lemon juice to the skillet. Season the chicken with salt, black pepper and crushed red pepper. Cover.

4. Cook over low heat for 15 minutes. Baste with the pan juices while the chicken cooks.

5. Serve. spooned with the pan juices. Sprinkle with parsley.

Good served with: Mashed potatoes, green beans and dinner rolls.
