"Cinnamon French Toast"

Serving Size: Makes 4 servings

1/2 cupfat free evaporated milk
1/2 cupfat free egg substitute
1/8 teaspoonground cinnamon
1/8 teaspoongrated nutmeg
8 sliceswhole wheat or whole grain bread
2 teaspoonscanola oil
3peaches, sliced
1 cupraspberries

Preparation Instructions:

In a small bowl, whisk together milk, egg substitute, cinnamon, and nutmeg. pour into a 9 x 13 inch baking dish.

Dip bread in milk mixture, flipping pieces to coat both sides.

Coat a large skillet with nonstick spray. Heat pan over medium-high heat. pour in 1 teaspoon oil. Add 4 bread slices and brown 2 to 3 minutes per side.

Repeat with remaining oil and bread. Top with peach slices and raspberries. Serves 4.

Per serving: 245 calories; 5.0g fat; 1.0mg cholesterol; 382mg sodium; 7.5g fiber.
