"Salmon Souffle"

Serving Size: Makes 4 to 6 servings

AmountIngredient
2 tablespoonsbutter or margarine, melted
1/2 cupmilk
4 slicesbread, torn into pieces
2 cans (16 ounces each)red salmon, drained and flaked
2eggs, separated
3 tablespoonslemon juice
2 teaspoonsminced onion
1 teaspoonsalt
1/2 teaspoonpepper
 Paprika

Preparation Instructions:

Mix butter, milk and bread; stir in salmon, egg yolks, lemon juice, onion, salt, and pepper. Beat egg whites until stiff; fold into salmon mixture. Pour into greased 1 1/2 quart casserole. Sprinkle with paprika. Bake uncovered in a 350 degree oven for 1 hour.
