"Currant and Green Tomato Chutney"

Serving Size: Makes 6 pints

AmountIngredient
3 cupscurrants
4 1/2 cupsfinely chopped green tomatoes
4 1/2 cupspeeled and chopped tart apples
2lemons, seeded, quartered and sliced thin
2 cupsminced onion
2 clovesgarlic
1/2 cuphoney
1 cupvinegar
1 cupwater
2 tablespoonsmustard seeds
1/2 teaspooncayenne pepper
2 teaspoonsground ginger

Preparation Instructions:

Combine all ingredients. Simmer until fruit is soft, about 20 minutes. Pack into hot, scalded pint jars, leaving 1/4 inch of headspace. Seal and process for 5 minutes in a boiling water bath.

This recipe can be used in place of mincemeat in pie filling. Instead of chopping tomatoes and apples, just put them through a meat grinder. You can substitute raisins for the currants.
