Serving Size: Makes 4 to 6 servings

3 1/2 to 4 cupspeeled, sliced peaches
1/2 teaspooncinnamon
2 1/2 teaspoonscornstarch
1/3 cupbrown sugar
1/4 cupbutter or margarine
1/3 cupgranulated sugar
1egg
3/4 cupall purpose flour
1/4 teaspoonsalt
1 teaspoonbaking powder
1/3 cupmilk
1 teaspoonvanilla
1 tablespoongranulated sugar mixed with 1/8 teaspoon cinnamon

Preparation Instructions:

1. In a 1 1/2 quart casserole or souffle dish, combine the peaches, cinnamon, cornstarch and brown sugar. Toss gently.

2. In a bowl, beat together the butter and sugar until creamy. Beat in egg.

3. In a small bowl, combine the flour, salt and baking powder. Stir into butter mixture alternately with the milk to make a batter. Add vanilla.

4. Pour batter over peaches. Sprinkle with cinnamon-sugar

5. Bake at 375 degrees for 30 minutes.

6. Serve warm, rather than hot, with vanilla ice cream.

Per serving: 272 calories; 3.8 g protein; 45.0 g carbohydrate; 9.3 g fat; 247 mg sodium.
